Sfoglia is a type 00 wheat flour, which is balanced and particularly suitable for physical leavening. Promotes dough relaxation in lamination against direct processing that does not require overnight rest. Specific for quick puff pastry and for those products that require gluten to lose toughness early facilitating short, crispy chewing.
